Beetroot fettuccine with lemon butter, feta & walnuts.

Our Beetroot with Feta Pasta recipe has a vibrant fusion of colours and flavours, with a symphony of earthy beets, creamy feta cheese, crunchy walnuts, and zesty lemon. A plate of artistry for your palate awaits!

Ingredients:

For the Beetroot Pasta Dough:

  • 1 medium-sized roasted beetroot, peeled and pureed

  • 250g 00 flour (plus extra for dusting)

  • 1 teaspoon olive oil

  • 4 large egg yolks

For Assembly and Garnish:

  • Salt for boiling water

  • Feta cheese, crumbled

  • Chopped walnuts

  • Zest from 1 lemon

  • Fresh parsley, chopped (for garnish)

  • Salt and black pepper to taste

Method

Step 1: Prepare the Beetroot Puree

  • Roast a medium-sized beetroot in the oven until it's tender.

  • Let it cool, peel it, and puree it until smooth. You should have about 1/2 cup of beetroot puree.

Step 2: Make the Pasta Dough

  • Create a mound of 250g of 00 flour on a clean surface.

  • Make a well in the center of the flour.

Step 3: Mix the Pasta Dough

  • In a bowl, combine the beetroot puree, 1 teaspoon of olive oil, and 4 egg yolks.

  • Pour this mixture into the well in the flour.

Step 4: Form the Dough

  • Gradually mix the flour into the wet ingredients until it forms a dough.

  • Knead the dough for 5-7 minutes until it's smooth and elastic. Add more flour if it's too sticky.

  • Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

Step 5: Roll and Cut the Pasta

  • Divide the rested dough into smaller portions for easier handling.

  • Roll out each portion into thin sheets using a pasta machine or a rolling pin. Dust with flour to prevent sticking.

  • Cut the sheets into your desired pasta shape.

Step 6: Cook the Pasta

  • Bring a pot of salted water to a boil.

  • Add the beetroot pasta and cook for 2-3 minutes or until al dente. Fresh pasta cooks quickly.

Step 7: Assemble the Dish

  • Drain the cooked beetroot pasta and transfer it to a serving dish.

  • Crumble feta cheese over the pasta.

  • Sprinkle chopped walnuts and lemon zest over the pasta.

  • Season with salt and black pepper to taste.

Step 8: Garnish and Serve

  • Garnish your homemade Beetroot Pasta with fresh parsley for color and freshness.
