Black Forest Cake Recipe.

Treat yourself to our Black Forest Cake, a classic favorite with a twist. Layers of rich chocolate cake between smooth chocolate ganache cream, glacé cherries and blackberries. Each bite is a delightful burst of flavors that will leave you craving for more. Perfect for any celebration, or just because, it's a decadent dessert that is always a crowd favourite.

Ingredients:

Cake:

  • 6 eggs

  • 230g sugar

  • 75g cornflour

  • 75g 00 flour

  • 75g self-raising flour

  • 75g dark cocoa powder

Whipped Cream:

  • 250ml pure cream

  • 1 tsp vanilla bean extract

  • 30g icing sugar

Ganache:

  • 250g pure cream

  • 230g dark chocolate

Filling & Topping:

  • Raspberries, strawberries, blueberries, or a mixture

  • Glazed cherries or fresh cherries, depending on the season

  • Chambord or Cointreau for brushing

Instructions:

Cake Preparation:

Step1: Preheat oven to 180°C. In a mixing bowl, beat the eggs and sugar until thick, forming a ribbon-like effect when lifted. In a separate bowl, sift together the cornflour, 00 flour, self-raising flour, and cocoa powder. Gently fold the dry ingredients into the egg mixture, being careful not to deflate the mixture too much. Pour the batter into a prepared 20cm cake tin. Bake in the preheated oven for 20 minutes. Allow to cool.

Whipped Cream:

Step 2: Whip the cream, vanilla bean extract, and icing sugar until soft peaks form. Refrigerate until needed.

Ganache:

Step 3: Heat the cream in a pot on high until it starts to boil. Remove from heat and pour over the dark chocolate. Whisk until smooth. Refrigerate until needed.

Assembly:

Step 4: Once the cake has cooled, slice it into three even layers. Brush each layer with Chambord or Cointreau. On each layer, pipe an outer circle of whipped cream and a middle circle of ganache. Scatter a mixture of berries over the ganache and cream. Repeat this process for all three layers. For the top layer, pipe the remaining cream decoratively and garnish with a generous amount of berries and cherries.
