Ingredients:
1 1/2 cups whole milk
1 1/2 cups heavy cream
1 cup sugar
4 whole eggs
2 egg yolks
1 tablespoon peppermint essence
Green food coloring (optional)
1 cup semisweet chocolate chips
Instructions:
Step 1:
In a large mixing bowl, whisk together the whole milk, heavy cream, sugar, and peppermint essence until the sugar is fully dissolved.
Step 2:
In another bowl, beat the whole eggs and egg yolks until light and fluffy.
Step 3:
Gradually add the egg mixture to the milk mixture, whisking continuously.
Step 4:
Pour the mixture into a saucepan and cook over medium heat, stirring constantly until the mixture thickens slightly and coats the back of a spoon. Do not let it boil.
Step 5:
Remove from heat and add a few drops of green food coloring (if using), stirring until well combined.
Step 6:
Allow the mixture to cool to room temperature, then refrigerate for at least 2 hours or until completely chilled.
Step 7:
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions.
Step 8:
Just before the ice cream is done churning, add the chocolate chips.
Step 9:
Transfer the churned ice cream to a lidded container and freeze for at least 2 hours or until firm.
