Ingredients:
Duck:
Duck breasts: 2
Salt: 1 tsp
Five-spice powder: 1/2 tsp
Tart Shells: puff pastry
Filling:
Hoisin sauce: 1/3 cup
Spring onions 3, thinly sliced
Cucumber: 1 small, julienned or thinly sliced
Fresh cilantro: a few leaves for garnish

Instructions:
step 1: Prep the Duck
step 2: Score the duck breast skin in a crisscross pattern, being careful not to cut into the meat. Brush it with hosin.
step 3: Rub both sides of the duck breasts with salt and five-spice powder.
step 4: Cook the Duck:
step 5: Place the duck breasts skin-side down in a cold, non-stick skillet.
step 6: Turn the heat to medium and let the duck slowly render its fat. Cook until the skin is crispy and golden brown, about 6-8 minutes.
step 7: Flip the duck over and cook for another 4-5 minutes until it's medium-rare.
step 8: Remove the duck from the pan and let it rest for a few minutes. Then, thinly slice or shred the meat.
step 9: Assemble the Tarts:

step 11: Spread a thin layer of hoisin sauce inside each tart shell.
step 12: Add slices or shreds of duck into each tart.
