Method:

Step 1: Start by toasting the hazelnuts. Preheat your oven to 180 degrees . Spread the hazelnuts evenly on a baking sheet and toast them in the oven for about 8 minutes until they become fragrant and slightly golden. Remove from the oven and let them cool.

Step 2: Once the hazelnuts have cooled, crush them into small pieces using a blender or a mortar and pestle. Set aside.

Step 3: In a saucepan, bring the pouring cream to a boil. Watch carefully and remove it from the heat just as it starts to slightly raise up the pan.

Step 4: Place the dark chocolate in a large mixing bowl. Pour the hot cream over the chocolate and use a whisk to mix until the chocolate is completely melted and the mixture becomes smooth and shiny.

Step 5: Add a pinch of Olson sea salt red gum smoked flakes into the chocolate mixture and stir to combine.

Step 6: Mix in the crushed hazelnuts into the chocolate mixture, making sure they are evenly distributed.

Step 7: Let the chocolate mixture cool down on the kitchen counter until it reaches room temperature.

Step 8: Once the mixture has cooled, cover it with cling wrap and place it in the refrigerator to set and firm up. This process usually takes a few hours or overnight.

Step 9: Once the chocolate mixture has firmed up, remove it from the fridge.

Step 10: Use your hands to roll the chocolate mixture into small balls, approximately 40g each. You can adjust the size based on your preference.

Step 11: Dust the dark chocolate truffles with cocoa powder, ensuring they are completely coated.

Step 12: Store the truffles in an airtight container in the refrigerator until ready to serve.

Enjoy these delectable homemade dark chocolate truffles as a delightful treat or gift for your loved ones!

Note: You can also experiment with different coatings for the truffles, such as powdered sugar, chopped nuts, or chocolate shavings, to add variety and texture to the truffles.
