Instructions:

  1. Mix Dry Ingredients: In a large bowl, sift together the flour, baking powder, sugar, and salt.

  2. Add Wet Ingredients: Make a well in the center of the dry ingredients. Pour in the milk, egg, and melted butter. Mix until smooth.

  3. Preheat Pan: Heat a lightly oiled griddle or frying pan over medium-high heat.

  4. Cook Pancakes: Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until bubbles form and the edges are dry, about 2-3 minutes per side. Flip and cook until browned on the other side.

  5. Serve: Serve the pancakes hot, topped with maple syrup.

Chef Brooke Silk’s Notes:

  • Consistency is Key: The batter should be smooth but not too runny. If it's too thick, add a bit more milk.

  • Perfect Flip: Wait until bubbles pop and form holes that stay open before flipping the pancakes.

  • Keeping Pancakes Warm: If you're cooking in batches, keep the finished pancakes warm in an oven set at 95°C (200°F) until ready to serve.

  • Variations: Add blueberries, chocolate chips, or sliced bananas to the batter for extra flavour.
