King fish tartare with avocado mash recipe

This Kingfish Tartare is a sophisticated and refreshing dish, perfect for an elegant appetizer or a light main course. The delicate flavor of fresh kingfish is complemented by the crunch of red capsicum, the creaminess of avocado, and the tang of lime. The dish is beautifully finished with vibrant edible flowers and zesty lemon pearls, making it as visually stunning as it is delicious. Perfect for impressing guests or treating yourself to a gourmet experience at home.
Ingredients
For the Kingfish Tartare:
200g fresh kingfish fillet, finely diced
1 small red capsicum, finely diced
1 small red onion
2 small radish
1 tablespoon chives, finely chopped
1 tablespoon olive oil
1 teaspoon sesame oil
Salt and pepper, to taste
For the Lime Avocado Mash:
2 ripe avocados
Juice of 2 limes
Salt and pepper, to taste
For Garnish:
Edible flowers
Lemon pearls (you can buy these or make them using molecular gastronomy techniques)
Extra chopped chives
Instructions
1. Prepare the Kingfish Tartare:
Combine Ingredients: In a medium bowl, combine the diced kingfish, red capsicum,radish,onion and chives.
Season: Add the olive oil, sesame oil, salt, and pepper. Mix gently to combine.
Chill: Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
2. Prepare the Lime Avocado Mash:
Mash Avocados: In a bowl, mash the avocados until smooth.
Add Lime Juice: Mix in the lime juice.
Season: Season with salt and pepper to taste.
3. Assemble the Dish:
Base Layer: Place a generous spoonful of the lime avocado mash on the serving plates.
Top with Tartare: Add a portion of the kingfish tartare on top of the avocado mash.
Garnish: Decorate with edible flowers, extra chopped chives, and lemon pearls.
Serve Immediately: Serve immediately to enjoy the fresh flavors.

Ensure the kingfish is very fresh, as it will be consumed raw.
Keep all ingredients chilled until ready to serve for optimal freshness.
You can make lemon pearls using sodium alginate and calcium chloride, if you want to prepare them at home.
