Pineapple tarte tatin, a delightful twist on the traditional pineapple tart. This dessert features a flaky puff pastry base topped with lusciously caramelised pineapple, combining the comforting warmth of cinnamon and vanilla with the bright, sweet flavors of pineapple. Perfect for a special occasion or a cozy evening at home, this tart tartine is not only visually appealing but also deliciously satisfying.
Ingredients:
1 sheet of puff pastry (store-bought or homemade puff pastry, see our recipe here)
2-3 pineapples (peeled, cored, and cut into thin rings)
1/2 cup (100g) brown sugar
4 tbsp (60g) unsalted butter
1 tsp vanilla extract
1/4 tsp ground cinnamon
1 pinch of salt
Egg wash (1 beaten egg with a tbsp of water)
Optional: whipped cream or vanilla ice cream for serving
Instructions:
Preheat the Oven:
Preheat your oven to 375°F (190°C).
Prepare the Pineapple:
In a large skillet over medium heat, melt the butter.
Add the brown sugar, vanilla extract, cinnamon, and salt, stirring until the sugar dissolves.
Add the pineapple rings and cook for about 2-3 minutes per side or until they are caramelized. Remove from heat.
Prepare the Puff Pastry:
Roll out the puff pastry on a lightly floured surface to remove any creases. Cut into a rectangle or circle to fit your tart pan or baking sheet.
Arrange the caramelised pineapple rings neatly over the puff pastry. You can overlap them slightly to ensure the entire surface is covered.
Bake:
Brush the edges of the pastry with the egg wash.
Bake in the preheated oven for 25-30 minutes or until the pastry is golden and puffed.
Serve:
Let the tart cool slightly before serving. It can be enjoyed warm or at room temperature.
Serve with a dollop of whipped cream or a scoop of vanilla ice cream if desired.

Pineapple Selection: Choose ripe pineapples for a sweeter flavor and easier caramelization. If fresh pineapple is not available, you can use canned pineapple rings, but make sure to drain them well.

Or if using frozen puff pastry, remember to thaw it according to package instructions before use. Also, be careful not to stretch the pastry as it might shrink during baking.
Caramelization: Keep a close eye on the pineapple while caramelizing to prevent burning. Adjust heat as necessary.
Serving Suggestions: This tart can be served either warm or at room temperature. If serving as part of a larger meal, consider lighter main courses since the dessert is quite rich.
Variations: For an added twist, sprinkle crushed nuts or coconut flakes over the pineapple before baking.
