Matcha chia pudding is a refreshing and healthy treat, perfect for a light breakfast or a nutritious snack. Here’s a simple recipe to make it.

Ingredients:

  • 2 cups unsweetened almond milk (or any other milk of your choice)

  • 1/4 cup chia seeds

  • 1-2 tbsp honey or sweetener of choice, adjust to taste

  • 1 tsp pure vanilla extract

  • 1-2 tbsp matcha green tea powder, depending on how strong you like it

  • Optional toppings: fresh fruits, nuts, coconut flakes, or granola

Instructions:

  1. Mix the Liquid Ingredients:

    • In a medium-sized mixing bowl, whisk together the almond milk, honey, vanilla extract, and matcha powder until the matcha is fully dissolved and the mixture is smooth. Taste and adjust the sweetness if needed.

  2. Add Chia Seeds:

    • Add the chia seeds to the matcha mixture and whisk well to combine. Ensure the seeds are fully immersed and there are no clumps.

  3. Let It Set:

    • Cover the bowl with a lid or plastic wrap and refrigerate for at least 4 hours, though overnight is best. This allows the chia seeds to absorb the liquid and gel up, creating a pudding-like consistency.
