Total Time: At least 4 hours, to allow the chia seeds to fully gel and achieve the pudding consistency (includes chilling time).
Matcha chia pudding is a refreshing and healthy treat, perfect for a light breakfast or a nutritious snack. Here’s a simple recipe to make it.
Ingredients:
2 cups unsweetened almond milk (or any other milk of your choice)
1/4 cup chia seeds
1-2 tbsp honey or sweetener of choice, adjust to taste
1 tsp pure vanilla extract
1-2 tbsp matcha green tea powder, depending on how strong you like it
Optional toppings: fresh fruits, nuts, coconut flakes, or granola
Instructions:
Mix the Liquid Ingredients:
In a medium-sized mixing bowl, whisk together the almond milk, honey, vanilla extract, and matcha powder until the matcha is fully dissolved and the mixture is smooth. Taste and adjust the sweetness if needed.
Add Chia Seeds:
Add the chia seeds to the matcha mixture and whisk well to combine. Ensure the seeds are fully immersed and there are no clumps.
Let It Set:
Cover the bowl with a lid or plastic wrap and refrigerate for at least 4 hours, though overnight is best. This allows the chia seeds to absorb the liquid and gel up, creating a pudding-like consistency.
Stir and Serve:
Once set, stir the pudding to ensure the seeds haven’t clumped together at the bottom or sides of the bowl. If the pudding is too thick, you can add a little more milk to reach your desired consistency.
Add Toppings and Serve:
Serve the pudding in bowls or glasses and top with your choice of fruits, nuts, coconut flakes, or granola for added texture and flavour.

Matcha Quality:
The quality of matcha powder greatly influences the flavor and color of your pudding. Ceremonial grade matcha is best for a vibrant color and smooth flavor, but culinary grade can work well too if you're on a budget.
Milk Choice:
The type of milk used can alter the flavor and texture of your pudding. Almond milk gives a slightly nutty flavor and light texture, but coconut milk can be used for a creamier consistency and tropical flavor.
Stirring:
Make sure to stir the mixture well after adding chia seeds to avoid any lumps and to ensure even gelling.
