Ingredients:

  • 1 tablespoon peanut butter

  • 2 tablespoons coconut oil (plus extra for melting chocolate)

  • 220g pitted dates

  • 50g pecans

  • 80g dark chocolate

  • 60g desiccated coconut (30g for rolling, 30g for balls)

  • 10g salt

Instructions:

  1. Prepare the Ingredients:

    • Measure out all the ingredients.

    • Pit the dates if not already pitted.

  2. Blend the Base:

    • In a food processor, combine the pitted dates, pecans, peanut butter, coconut oil, 30g of desiccated coconut, and salt.

    • Blend until the mixture forms a sticky, dough-like consistency.

  3. Form the Balls:

    • Using your hands, take small portions of the mixture and roll them into bite-sized balls.

  4. Melt the Chocolate:

    • In a microwave-safe bowl, melt the dark chocolate with a small amount of coconut oil (about 1 teaspoon).

    • Heat in 20-second intervals, stirring each time, until the chocolate is fully melted and smooth.

  5. Coat with Chocolate:

    • Dip each protein ball into the melted chocolate, ensuring they are fully coated.

    • Place the coated protein balls on a parchment-lined tray.

  6. Roll in Coconut:

    • Roll the chocolate-coated protein balls in the remaining 30g of desiccated coconut until evenly covered.

  7. Chill:

    • Place the coated protein balls on a tray and refrigerate for at least 30 minutes to firm up.

  8. Enjoy:

    • Once chilled, your peanut butter protein balls are ready to enjoy. Store any leftovers in an airtight container in the fridge.

For a smoother texture, soak the dates in warm water for 10 minutes before blending.

You can substitute pecans with almonds or walnuts if you prefer.

To make the protein balls more indulgent, drizzle them with extra melted dark chocolate before chilling.
