Method:
Start by puréeing the frozen strawberries until smooth.
Strain the strawberry purée to remove any seeds or fibers, leaving behind a smooth liquid.
In a small bowl, soak the gelatine in 2 tablespoons of water and let it bloom for a few minutes.
In a saucepan, combine the sugar and water. Heat the mixture over medium heat, stirring until the sugar completely dissolves. Then, allow the mixture to cool for about 10 minutes.
Add the bloomed gelatine to the slightly cooled sugar-water mixture and stir until the gelatine is fully dissolved.
In a stand mixer or with a handheld electric mixer, whip the gelatine mixture on high speed for about 10 minutes until it becomes thick and fluffy.
Divide the whipped mixture into two equal parts.
To one part, add the vanilla extract and mix until well combined.
To the other part, add the strawberry purée and food coluoring, and mix until the coluor is evenly distributed.
Line a rectangular container with cling film, leaving some excess film hanging over the sides.
Pour the vanilla marshmallow mixture into one half of the container and the strawberry marshmallow mixture into the other half.
Smooth the tops of both mixtures with a spatula.
Allow the marshmallow mixture to sit in the container at room temperature for about an hour to set and firm up.
Once the marshmallows are firm, lift the cling film to remove the entire marshmallow block from the container.
Use a sharp knife to cut the marshmallow block into desired shapes, such as squares or rectangles.
Dust the marshmallows with a little powdered sugar to prevent sticking.
Enjoy your homemade strawberry and vanilla marshmallows
