Homemade Marshmallows Berry Compote

Portions:

Makes approximately 20-25 marshmallows, depending on the size.

  • Setting Time: 1 hour (to allow the marshmallows to firm up)

    Homemade delight of Strawberry and Vanilla Marshmallows, a perfect balance of fruity sweetness and creamy vanilla. These fluffy treats are made with real strawberry purée for an authentic burst of flavour. Ideal for snacking, decorating desserts, or adding a special touch to your hot beverages, these marshmallows are sure to impress.

Strawberry Marshmallows Berry Compote

Ingredients:

  • 300g sugar

  • 300g water

  • Powdered gelatine

  • 5mls food colouring

  • 100g frozen strawberries

  • 10g vanilla extract

Four Homemade Strawberry Marshmallows Berry Compote

Method:

  • Start by puréeing the frozen strawberries until smooth.

  • Strain the strawberry purée to remove any seeds or fibers, leaving behind a smooth liquid.

  • In a small bowl, soak the gelatine in 2 tablespoons of water and let it bloom for a few minutes.

  • In a saucepan, combine the sugar and water. Heat the mixture over medium heat, stirring until the sugar completely dissolves. Then, allow the mixture to cool for about 10 minutes.

  • Add the bloomed gelatine to the slightly cooled sugar-water mixture and stir until the gelatine is fully dissolved.

  • In a stand mixer or with a handheld electric mixer, whip the gelatine mixture on high speed for about 10 minutes until it becomes thick and fluffy.

  • Divide the whipped mixture into two equal parts.

  • To one part, add the vanilla extract and mix until well combined.

  • To the other part, add the strawberry purée and food coluoring, and mix until the coluor is evenly distributed.

  • Line a rectangular container with cling film, leaving some excess film hanging over the sides.

  • Pour the vanilla marshmallow mixture into one half of the container and the strawberry marshmallow mixture into the other half.

  • Smooth the tops of both mixtures with a spatula.

  • Allow the marshmallow mixture to sit in the container at room temperature for about an hour to set and firm up.

  • Once the marshmallows are firm, lift the cling film to remove the entire marshmallow block from the container.

  • Use a sharp knife to cut the marshmallow block into desired shapes, such as squares or rectangles.

  • Dust the marshmallows with a little powdered sugar to prevent sticking.
