Ingredients:
Fritter Batter:
1 1/2 cups all-purpose flour
1/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2/3 cup milk (or plant-based milk for a vegan version)
2 eggs (or 2 flax eggs: 2 tablespoons ground flaxseed mixed with 6 tablespoons water for a vegan version)
1 teaspoon vanilla extract
2 large apples Granny Smith , peeled, cored, and chopped into small pieces
Vegetable oil, for frying
Glaze (optional):
1 cup powdered sugar
2-3 tablespoons milk (or plant-based milk)
1/2 teaspoon vanilla extract
Instructions:
Prepare the Batter:
In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
In a separate bowl, whisk together the milk, eggs (or flax eggs), and vanilla extract.
Gradually pour the wet ingredients into the dry ingredients, mixing until just combined.
Fold in the chopped apples until evenly distributed.
Heat the Oil:
In a deep skillet or heavy-bottomed pot, heat about 2 inches of vegetable oil to 175°C (350°F ).
Test the oil temperature by dropping a small amount of batter into the oil; it should sizzle and rise to the surface.
Fry the Fritters:
Carefully drop large spoonfuls of the batter into the hot oil, avoiding overcrowding.
Fry the fritters for 2-3 minutes on each side, or until golden brown and crispy.
Use a slotted spoon to remove the fritters from the oil and drain them on a paper towel-lined plate.
Make the Glaze (Optional):
In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
Drizzle the glaze over the warm fritters or dip each fritter into the glaze for a sweeter treat.
Serve:
Serve the apple fritters warm, with a dusting of powdered sugar or a drizzle of glaze.

For a vegan option, substitute the milk with plant-based milk and the eggs with flax eggs.
