  • 1 sheet of puff pastry (or homemade shortcrust pastry)

  • 2 medium sweet potatoes, peeled and sliced thinly

  • 4 slices bacon, cooked and crumbled

  • 1 cup fresh spinach leaves

Instructions:

  1. Prepare the Sweet Potatoes:

    • Preheat your oven to 200°C ( 400°F).

    • Toss the thinly sliced sweet potatoes in olive oil, salt, and pepper.

    • Arrange them on a baking sheet in a single layer and roast for 15-20 minutes, or until they are tender and slightly golden. Set aside to cool slightly.

  2. Prepare the Pastry:

    • Roll out the puff pastry on a lightly floured surface to fit your tart pan.

    • Press the pastry into the tart pan, trimming the edges as needed.

    • Prick the base with a fork and refrigerate while you prepare the filling.

  3. Assemble the Tart:
