Ingredients:

Pancakes:

  • 1 1/2 cups all-purpose flour

  • 3 1/2 teaspoons baking powder

  • 1 teaspoon salt

  • 1 tablespoon sugar

  • 1 1/4 cups plant-based milk (such as almond or oat milk)

  • 1 egg substitute (such as 1 tablespoon ground flaxseed mixed with 3 tablespoons water)

  • 3 tablespoons melted vegan butter or coconut oil

Caramelized Bananas:

  • 2 ripe bananas, sliced

  • 2 tablespoons vegan butter or coconut oil

  • 2 tablespoons brown sugar

  • 1 teaspoon vanilla extract

  • Pinch of cinnamon (optional)

Toppings (optional):

  • Maple syrup

  • Powdered sugar

  • Fresh banana slices

  • Vegan whipped cream

  • Roasted hazelnuts, Brazil nuts, pecans or almonds.

Instructions:

  1. Prepare the Pancake Batter:

    • In a large bowl, sift together the flour, baking powder, salt, and sugar.

    • Make a well in the center and pour in the plant-based milk, egg substitute, and melted vegan butter or coconut oil. Mix until smooth.

  2. Cook the Pancakes:

    • Heat a lightly oiled griddle or frying pan over medium-high heat.

    • Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and set aside.

  3. Caramelize the Bananas:

    • In a medium skillet, melt the vegan butter or coconut oil over medium heat.

    • Add the brown sugar and stir until it dissolves and begins to bubble.

    • Add the banana slices, vanilla extract, and cinnamon (if using). Cook, stirring gently, until the bananas are caramelized and soft, about 5 minutes.
