This recipe combines the fluffy goodness of pancakes with the rich, sweet flavour of caramelised bananas, creating a morning treat that's both indulgent and satisfying. Ingredients:
Pancakes:
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon sugar
1 1/4 cups plant-based milk (such as almond or oat milk)
1 egg substitute (such as 1 tablespoon ground flaxseed mixed with 3 tablespoons water)
3 tablespoons melted vegan butter or coconut oil
Caramelized Bananas:
2 ripe bananas, sliced
2 tablespoons vegan butter or coconut oil
2 tablespoons brown sugar
1 teaspoon vanilla extract
Pinch of cinnamon (optional)
Toppings (optional):
Maple syrup
Powdered sugar
Fresh banana slices
Vegan whipped cream
Roasted hazelnuts, Brazil nuts, pecans or almonds.
Instructions:
Prepare the Pancake Batter:
In a large bowl, sift together the flour, baking powder, salt, and sugar.
Make a well in the center and pour in the plant-based milk, egg substitute, and melted vegan butter or coconut oil. Mix until smooth.
Cook the Pancakes:
Heat a lightly oiled griddle or frying pan over medium-high heat.
Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and set aside.
Caramelize the Bananas:
In a medium skillet, melt the vegan butter or coconut oil over medium heat.
Add the brown sugar and stir until it dissolves and begins to bubble.
Add the banana slices, vanilla extract, and cinnamon (if using). Cook, stirring gently, until the bananas are caramelized and soft, about 5 minutes.
Assemble the Pancakes:
Place a stack of pancakes on a plate.
Spoon the caramelized bananas over the pancakes.
Serve:
Drizzle with maple syrup and sprinkle with powdered sugar.
Add fresh banana slices and a dollop of vegan whipped cream if desired.
