Ingredients:

  • Açai Base:

    1. 1 packet of frozen açai purée

    2. 1/2 cup coconut water

    3. 1/2 banana, sliced (for blending)

  • Toppings:

    1. 1/2 kiwi, sliced

    2. 1/2 banana, sliced

    3. 1/4 cup freshly made granola

    4. 2 strawberries, sliced

    5. 1 passionfruit, halved (use the pulp)

    6. A handful of blueberries (optional)

Instructions:

  1. Prepare the Açai Base:

    • In a blender, combine the frozen açai purée, coconut water, and half of the banana slices.

    • Blend until smooth and thick. If it's too thick, add a little more coconut water to reach your desired consistency.

  2. Assemble the Bowl:

    • Pour the açai mixture into a bowl.

    • Artfully arrange the kiwi slices, banana slices, freshly made granola, strawberries, passionfruit pulp, and any optional toppings like blueberries on top of the açai base.

  3. Serve:

    • Serve immediately while the açai base is still cold and enjoy!

Chef Brooke Silk's Notes:

Açai Base: To achieve a thick, spoonable consistency, make sure your açai purée is frozen solid before blending. If you prefer a sweeter base, you can add a drizzle of honey or a few pitted dates before blending.

Granola: Freshly made granola adds a delightful crunch and is healthier than store-bought versions. Feel free to customize your granola with nuts, seeds, or a sprinkle of cinnamon for added flavor.

Fruit Toppings: The combination of fruits can be adjusted to your preference. Berries, mango, or even coconut flakes would make great additions.

Coconut Water: Using coconut water not only hydrates but also adds a subtle sweetness that complements the tartness of the açai.

Presentation: For an Instagram-worthy presentation, take your time arranging the fruit toppings in a visually appealing pattern.
