Ingredients
For the Cured Salmon:
1 side of fresh salmon, skin on (about 2-3 pounds)
1/2 cup vodka
1/2 cup sea salt
1/2 cup granulated sugar
1 tablespoon freshly cracked black pepper
1 bunch fresh dill
Zest of 1 lemon
For the Fresh Row Cucumber Salad:
2 large cucumbers, thinly sliced
1/4 cup rice vinegar
1 tablespoon sugar
Pinch of salt
1/4 cup fresh coriander, chopped
1/4 cup fresh mint leaves, chopped
Cured Salmon:
Step 1:
In a bowl, mix together the sea salt, granulated sugar, cracked black pepper, and lemon zest.
Step 2:
Lay the salmon skin-side down on a tray or dish. Brush the vodka evenly over the flesh, then cover the salmon with the salt-sugar mixture. Place a bunch of fresh dill on top.
Step 3:
Cover the salmon with plastic wrap and place a weight on top (such as another tray with cans). Refrigerate for 24-36 hours, turning the salmon over every 12 hours.
Step 4:
After curing, rinse the salmon under cold water to remove the cure mixture. Pat dry with paper towels, then thinly slice.
Fresh Row Cucumber Salad:
Step 1:
In a small bowl, whisk together the rice vinegar, sugar, and a pinch of salt until the sugar dissolves.
Step 2:
Place the thinly sliced cucumbers in a serving bowl. Pour the vinegar mixture over the cucumbers and toss gently.
Step 3:
Just before serving, sprinkle with chopped coriander and mint.
Assembly
Step 1:
Arrange slices of cured salmon on a serving platter.
Step 2:
Serve alongside the fresh row cucumber salad, allowing guests to combine the flavors as they prefer.
