Ingredients

  • 1 side of fresh salmon, skin on (about 2-3 pounds)

  • 1/2 cup vodka

  • 1/2 cup sea salt

  • 1/2 cup granulated sugar

  • 1 tablespoon freshly cracked black pepper

  • 1 bunch fresh dill

  • Zest of 1 lemon

For the Fresh Row Cucumber Salad:

  • 2 large cucumbers, thinly sliced

  • 1/4 cup rice vinegar

  • 1 tablespoon sugar

  • Pinch of salt

  • 1/4 cup fresh coriander, chopped

  • 1/4 cup fresh mint leaves, chopped

Cured Salmon:

Step 1:

In a bowl, mix together the sea salt, granulated sugar, cracked black pepper, and lemon zest.

Step 2:

Lay the salmon skin-side down on a tray or dish. Brush the vodka evenly over the flesh, then cover the salmon with the salt-sugar mixture. Place a bunch of fresh dill on top.

Cover the salmon with plastic wrap and place a weight on top (such as another tray with cans). Refrigerate for 24-36 hours, turning the salmon over every 12 hours.
