Ingredients
For the Pastry Crust:
2 1/2 cups all-purpose flour
1 cup unsalted butter, cold and cubed
1 teaspoon salt
6-8 tablespoons ice water
For the Meat Filling:
2 tablespoons olive oil
1 large onion, finely chopped
2 cloves garlic, minced
1 pound ground beef or lamb
1 carrot, diced
1/2 cup frozen peas
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 cup beef broth
1 teaspoon fresh thyme leaves
Salt and pepper, to taste
1 egg, beaten for egg wash
Instructions
Make the Pastry Crust:
1. Combine Flour and Butter:
In a large bowl, mix the flour and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
2. Add Ice Water:
Gradually add ice water, a tablespoon at a time, mixing until the dough just comes together.
3. Form Dough and Chill:
Turn the dough onto a floured surface, form into two discs (one slightly larger for the bottom crust), wrap in plastic wrap, and refrigerate for at least 30 minutes.
Prepare the Meat Filling:
1. Cook Onion and Garlic:
In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, cooking until softened.
2. Brown the Meat:
Increase the heat to medium-high, add the ground meat, and cook until browned. Drain any excess fat.
3. Add Vegetables and Seasonings:
Stir in the carrot, peas, tomato paste, Worcestershire sauce, beef broth, and thyme. Season with salt and pepper. Simmer for about 15 minutes until the vegetables are tender and the sauce has thickened. Let cool.
Assemble and Bake the Pie:
1. Preheat Oven:
Preheat your oven to 375°F (190°C).
2. Roll Out Pastry:
On a floured surface, roll out the larger disc of pastry to fit a 9-inch pie dish. Transfer it to the dish, pressing into the bottom and sides.
3. Fill Pie:
Spoon the meat filling into the pastry-lined pie dish.
4. Add Top Crust:
Roll out the second disc of pastry and place it over the filling. Trim any excess pastry and crimp the edges to seal. Make a few slits in the top to allow steam to escape.
5. Apply Egg Wash:
Brush the top of the pie with beaten egg.
6. Bake:
Bake for about 40-45 minutes, or until the pastry is golden brown and the filling is bubbling.
Cool and Serve:
Let the pie cool for at least 10 minutes before serving.
