Ingredients:

For the Chicken Skewers:

  • 500g boneless, skinless chicken breasts, cut into 1-inch pieces

  • 2 cloves garlic, minced

  • 1 lemon, juiced and zested

  • 2 tablespoons olive oil

  • 1 teaspoon dried oregano

  • Salt and black pepper to taste

  • Wooden skewers, soaked in water for 30 minutes (or metal skewers)

For the Tzatziki Sauce:

  • 1 cup Greek yogurt

  • 1 cucumber, grated and excess moisture squeezed out

  • 2 cloves garlic, minced

  • 1 tablespoon fresh dill, chopped

  • 1 tablespoon fresh mint, chopped

  • 1 tablespoon lemon juice

  • Salt and black pepper to taste

Instructions:

Step 1: Marinate the Chicken:

  • In a bowl, combine minced garlic, lemon juice, lemon zest, olive oil, dried oregano, salt, and black pepper.

  • Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or marinate overnight for more flavor.

Step 2: Prepare the Tzatziki Sauce:

  • In another bowl, combine Greek yogurt, grated cucumber, minced garlic, chopped fresh dill, chopped fresh mint, lemon juice, salt, and black pepper. Mix well.

  • Cover and refrigerate the tzatziki sauce until you're ready to serve.

Step 3: Skewer the Chicken:

  • Preheat your grill to medium-high heat.

  • Thread the marinated chicken pieces onto the soaked wooden skewers (or metal skewers), leaving a small gap between each piece.

Step 4: Grill the Chicken Skewers:

  • Place the chicken skewers on the preheated grill.

  • Grill for about 5-7 minutes per side or until the chicken is cooked through and has grill marks. Cooking time may vary depending on the thickness of the chicken.

Step 5: Serve:

  • Serve the grilled chicken skewers with the prepared tzatziki sauce on the side for dipping.

  • Garnish with additional fresh herbs and lemon wedges if desired.
