Grilled Chicken Skewers with Tzatziki Sauce.

Ingredients:
For the Chicken Skewers:
500g boneless, skinless chicken breasts, cut into 1-inch pieces
2 cloves garlic, minced
1 lemon, juiced and zested
2 tablespoons olive oil
1 teaspoon dried oregano
Salt and black pepper to taste
Wooden skewers, soaked in water for 30 minutes (or metal skewers)
For the Tzatziki Sauce:
1 cup Greek yogurt
1 cucumber, grated and excess moisture squeezed out
2 cloves garlic, minced
1 tablespoon fresh dill, chopped
1 tablespoon fresh mint, chopped
1 tablespoon lemon juice
Salt and black pepper to taste
Instructions:
Step 1: Marinate the Chicken:
In a bowl, combine minced garlic, lemon juice, lemon zest, olive oil, dried oregano, salt, and black pepper.
Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or marinate overnight for more flavor.
Step 2: Prepare the Tzatziki Sauce:
In another bowl, combine Greek yogurt, grated cucumber, minced garlic, chopped fresh dill, chopped fresh mint, lemon juice, salt, and black pepper. Mix well.
Cover and refrigerate the tzatziki sauce until you're ready to serve.
Step 3: Skewer the Chicken:
Preheat your grill to medium-high heat.
Thread the marinated chicken pieces onto the soaked wooden skewers (or metal skewers), leaving a small gap between each piece.
Step 4: Grill the Chicken Skewers:
Place the chicken skewers on the preheated grill.
Grill for about 5-7 minutes per side or until the chicken is cooked through and has grill marks. Cooking time may vary depending on the thickness of the chicken.
Step 5: Serve:
Serve the grilled chicken skewers with the prepared tzatziki sauce on the side for dipping.
Garnish with additional fresh herbs and lemon wedges if desired.
