Ingredients:
For the Lemon Cake:
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
2 cups granulated sugar
4 large eggs
Zest of 2 lemons
Juice of 2 lemons
1 teaspoon vanilla extract
1 cup buttermilk
For the Lemon Glaze:
Juice of 1 lemon
1 1/2 cups powdered sugar
Instructions:
Step 1: Preheat the Oven and Prepare the Pan:
Preheat your oven to 350°F (175°C).
Grease and flour two 9-inch round cake pans or line them with parchment paper for easy removal.
Step 2: Mix the Dry Ingredients:
In a bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set this dry mixture aside.
Step 3: Cream the Butter and Sugar:
In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy. This can take about 2-3 minutes.
Step 4: Add Eggs and Lemon Zest:
Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
Mix in the lemon zest, lemon juice, and vanilla extract.
Step 5: Alternate Adding Dry and Wet Ingredients:
Gradually add the dry mixture (from Step 2) to the wet mixture, alternating with buttermilk. Start and finish with the dry ingredients.
Mix until just combined; be careful not to overmix.
Step 6: Bake the Cake:
Divide the cake batter evenly between the prepared cake pans.
Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
Step 7: Prepare the Lemon Glaze:
In a bowl, whisk together the lemon juice and powdered sugar until you have a smooth glaze.
Step 8: Glaze the Cake:
Once the cakes are completely cooled, place one of the cakes on a serving plate.
Drizzle some of the lemon glaze over the top.
Place the second cake on top and drizzle more glaze over the entire cake.
Let the glaze set for a few minutes.
Step 9: Serve:
Slice and serve your delicious homemade Lemon Cake.
