Ingredients:

For the Hoisin Lamb:

  • 4 boneless lamb chops or 1 lb (450g) lamb leg steaks

  • 1/4 cup hoisin sauce

  • 2 tablespoons soy sauce

  • 2 cloves garlic, minced

  • 1 tablespoon grated ginger

  • 1 tablespoon sesame oil

  • 1 tablespoon honey

  • Salt and black pepper to taste

  • Sesame seeds (for garnish)

  • Sliced green onions (for garnish)

For the Confit Shallots:

  • 8-10 shallots, peeled and left whole

  • 1 cup olive oil

  • 2-3 sprigs of fresh thyme

  • Salt and black pepper to taste

Instructions:

Step 1: Prepare the Confit Shallots:

  • Preheat your oven to 250°F (120°C).

  • In an ovenproof dish, combine the peeled shallots, olive oil, fresh thyme sprigs, salt, and black pepper.

  • Cover the dish with aluminum foil and place it in the preheated oven.

  • Slow-cook the shallots for about 2 hours or until they become soft and tender. Check occasionally to ensure they're not browning.

  • Once done, remove the shallots from the oil and set them aside.

Step 2: Marinate the Lamb:

In a bowl, combine hoisin sauce, soy sauce, minced garlic, grated ginger, sesame oil, honey, salt, and black pepper.

  • Place the lamb chops or lamb leg steaks in a shallow dish and pour the marinade over them. Make sure the lamb is evenly coated. Allow it to marinate for at least 30 minutes, or longer for more flavor.

Step 3: Grill the Lamb:

Preheat your grill to medium-high heat.

  • Remove the lamb from the marinade and grill for about 3-4 minutes per side for medium-rare or longer if you prefer your lamb more well-done.

  • While grilling, you can brush the lamb with some of the remaining marinade to enhance the flavor.

Step 4: Assemble and Serve:

To serve, place the grilled hoisin lamb on a serving platter.

  • Arrange the confit shallots around the lamb.

  • Garnish with sesame seeds and sliced green onions.
