This dessert is a delightful combination of zesty orange curd, rich chocolate crumble, sweet candied pecans, and tangy dehydrated oranges. Each component brings its unique flavour and texture, creating a sophisticated and indulgent treat.
Ingredients
For the Orange Curd:
3/4 cup fresh orange juice (about 3-4 oranges)
Zest of 2 oranges
1 cup sugar
8 tablespoons unsalted butter, room temperature
4 large eggs
1/2 cup lemon juice (about 2-3 lemons)
Pinch of salt
For the Chocolate Crumble:
1/2 cup all-purpose flour
1/2 cup granulated sugar
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons unsalted butter, melted
For the Candied Pecans:
1 cup pecan halves
1/4 cup brown sugar
1 tablespoon unsalted butter
Pinch of salt
For the Dehydrated Oranges:
2-3 large oranges
Orange Curd:
Step 1: Zest and juice the oranges to make 3/4 cup of orange juice.
Step 2: In a saucepan, combine the orange juice, lemon juice, orange zest, sugar, and butter. Heat over low heat until the butter melts.
Step 3: In a separate bowl, beat the eggs. Gradually whisk them into the saucepan. Cook over low heat, stirring constantly, until the mixture thickens, about 10 minutes.
Step 4: Remove from heat and strain the curd through a fine sieve. Let it cool to room temperature, then refrigerate.
Chocolate Crumble:
Step 1: Preheat the oven to 300°F (150°C).
Step 2: In a bowl, mix together the flour, sugar, cocoa powder, baking powder, and salt.
Step 3: Stir in melted butter until the mixture forms small clusters.
Step 4: Spread the mixture on a baking sheet and bake for 20 minutes. Let it cool, then crumble it into small pieces.
Candied Pecans:
Step 1: Preheat the oven to 350°F (175°C).
Step 2: Melt the butter with brown sugar and a pinch of salt. Toss the pecans in this mixture.
Step 3: Spread the pecans on a baking sheet and bake for 10-15 minutes, stirring occasionally. Let them cool.
Dehydrated Oranges:
Step 1: Preheat the oven to 200°F (95°C).
Step 2: Thinly slice the oranges and pat them dry.
Step 3: Arrange the slices on a baking sheet and bake for 2-3 hours, flipping halfway through, until they are fully dehydrated.
Assembly
Step 1: Spoon the orange curd into a serving dish.
Step 2: Sprinkle the chocolate crumble over the curd.
Step 3: Add candied pecans and arrange dehydrated orange slices on top.
