Salmon Fillet with Orange and Fennel Salad Recipe.

If you love Salmon recipes, indulge in a delightful blend of flavours with our Salmon Fillet with Orange and Fennel Salad. This dish combines the richness of perfectly baked salmon fillets with a refreshing and slightly sweet orange and fennel salad, topped with a light vinaigrette and fresh dill. It's a light yet satisfying meal that not only pleases the palate but also nourishes the body.
Ingredients:
For the Salmon Fillet:
4 salmon fillets (about 150-200g each)
2 tbsp olive oil
Salt and pepper, to taste
1 tsp lemon zest
For the Orange and Fennel Salad:
2 large oranges
1 fennel bulb, thinly sliced
1 small red onion, thinly sliced
2 tbsp fresh dill, chopped
2 tbsp olive oil
1 tbsp white wine vinegar or apple cider vinegar
Salt and pepper, to taste

Instructions:
1. Cooking the Salmon Fillet:
step 1: Preheat your oven to 180°C .
step 2: Season salmon fillets with salt, pepper, and lemon zest.
step 3: Heat olive oil in a non-stick skillet over medium-high heat.
step 4: Place the salmon fillets, skin-side down, in the skillet. Cook for 3-4 minutes until the skin is crispy.
step 5: Transfer the skillet to the oven and bake for 5-7 minutes or until salmon is cooked to your desired level of doneness.
step 6: Remove from the oven and let rest for a few minutes.
step 7: Preparing the Orange and Fennel Salad:
step 8: Peel the oranges, removing all of the bitter white pith. Over a bowl, cut between the membranes to release individual segments into the bowl, catching any juice.
step 9: Add thinly sliced fennel and red onion to the bowl.
step 10: In a separate small bowl, whisk together olive oil, vinegar, salt, and pepper. Pour this dressing over the orange, fennel, and onion mixture.
step 11: Gently toss the salad to combine, then sprinkle with fresh dill.
Serving:
Plate each salmon fillet and generously top with the orange and fennel salad.
